this, I need three values: the fat content of milk used to make quark, as a percentage, the initial mass of the milk and the final mass of the obtained quark (after discarding the whey). The formula is as follows:<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>f<sub>quark<\/sub>&nbsp;= m<sub>milk<\/sub>&nbsp;* f<sub>milk<\/sub>&nbsp;\/ m<sub>quark<\/sub><\/em><\/p>\n\n\n\n<p>where I\u2019ve used the letter&nbsp;<em>m<\/em>&nbsp;to indicate mass in grams and the letter&nbsp;<em>t<\/em>&nbsp;to indicate per cent fat content.<\/p>\n\n\n\n<p>Example: I used 2 litres (2000 g) of milk at 3.2% fat content. After squeezing out the whey, I obtained 550 g of quark. I plug in the numbers:<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>f<sub>quark<\/sub>&nbsp;= 2000 g * 3.2 % \/ 550 g = 11.64<\/em>&nbsp;%<\/p>\n\n\n\n<p>So, my quark contains 11.64% fat by weight. In case of store bough quark this is much simpler as the fat content is stated on the packaging. Now comes the complex part: how to calculate the amount of butter an quark that need to be mixed to obtain a given mass at 25% fat content?<\/p>\n\n\n\n<p>Input data:<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>m<sub>target<\/sub>&nbsp;= 500 g<br>f<sub>quark<\/sub>&nbsp;= 11.64%<br>f<sub>target<\/sub>&nbsp;= 25%<br>f<sub>butter<\/sub>&nbsp;= 82%<\/em><\/p>\n\n\n\n<p>Obviously, the input values have to be modified as needed. The values given are just an example.<\/p>\n\n\n\n<p>The formula to calculate the quark mass is derived from the so called St. Andrew\u2019s rule, also known as Pearson\u2019s square or Pearson\u2019s envelope (a rule often used in chemistry and very frequently in the dairy industry):<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>m<sub>target quark<\/sub>&nbsp;= m<sub>target<\/sub>&nbsp;* (f<sub>butter<\/sub>&nbsp;\u2013 f<sub>target<\/sub>) \/ (f<sub>butter<\/sub>&nbsp;\u2013 f<sub>quark<\/sub>) =<br>500 g * (82% \u2013 25%) \/ (82% \u2013 11.64%) =<br>500 g * 57% \/ 70.36% = 405<\/em>&nbsp;g<\/p>\n\n\n\n<p>From here, calculating the mass of butter is a breeze:<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>m<sub>target butter<\/sub>&nbsp;= m<sub>target<\/sub>&nbsp;\u2013 m<sub>target quark<\/sub>&nbsp;=<br>500 g \u2013 405 g = 95 g<\/em><\/p>\n\n\n\n<p>Difficult?
